6 Steps Konde Dabai Recipe Without Preservatives

How to preserve Fermented Dabai/Sarawak Olive (Kunde/Tempoyak Buah Dabai) without preservatives.


Ingredients:
1. Dabai Fruites
2. Salt
3. Sugar

1. Wash the Dabai fruits with boiling water (use warm water, not too hot as it will cause the fruits to shrink and harden) and then drain.

2. Dry and expose the drained fruits under the sun for 3 hours. Or keep it in a sealed container for 1 day and 1 night. (This method is for those who have no time to dry it under the sun).

3. Separate the yellowish white flesh from the seeds.

4. Mix with sugar and salt. Add on sugar for your own preference.If you want the taste to be saltier, reduce the sugar. (This goes likewise)

5. After mixing the seasoning as above, heat the pan on low to medium heat, stir in a non-stick pan continuously (to avoid burning) . You have to do this continuously for 1 to 2 hours.

6. Once done, let it rest and cool before you store it in an airtight container. 
The jar must be filled entirely full as extra air space may cause the mold to grow.

* Store in a dry area at room temperature or chiller.

Note: Fruits Fermented with Sugar

* Fill the jars entirely full, so as to leave no air space when fermented food/fruits cools and contracts; to avoid mold from develop.

* If the Dabai was not thoroughly cook, and still contains moisture,  this too can cause the mold to develop. Thus the reason you should cook it for 1 to 2 hours without oil or water. 


This recipe can stored fermented Dabai for up to 6 months without preservatives.
